I often use 唔使喇唔該 just to be on the safe side! 唔使 is fine too, but if I'm in a bad mood, it might sound impolite, so I just addthe 唔該just in case!

You probably meant 消毒水, which is an abbreviation of 消毒藥水. That is a disinfectant in the form of liquid alcohol, whereas hand sanitiser-- at least the kind that I know of-- is a form of vaporisable gel.
