I know this an old thread but just in case anyone stumbles across it as i did about 6 months ago I thought I would add to it with my recent experience.
First of all, if you don't know Hong Kong well and you do want to go there to learn either Mandarin or Cantonese Chinese it is a bit of a minefield to know which Chinese language school to go to as there are just so many of them. In most cases, you'll probably have someone there to recommend a decent school but that wasn't the case for me. I landed in Hong Kong not knowing anyone but I had made a number of preliminary enquiries by email before I went to get a feel for various schools.
I'm not here to speak badly of any school in particular because by and large I did get 'fairly' good service from most of them - as in useful and friendly response to my enquiries both in person and via email. However, some were more friendly and helpful than others.
The one I ended up spending a full three months at was a school located about a 15 minute walk away from Central. The school is called Q Language and I can't speak highly enough about the staff and teachers there. I also met a lot of lovely people (in fact one of them ended up being my current boyfriend *smile* LOL! They have a lot of foreign students there, possibly due to the fact that they help foreigners to get a study visa, which is one of the things I liked best about it - as in meeting different people from around the world.
I didn't mean for this to be an essay so i'll stop there! For what it's worth, if you are looking for Cantonese lessons in Hong Kong check out Q Language!
I was virtually a beginner but within 3 months I was confidently holding conversations with the locals - loved it!
Their web page for Chinese courses is: www.qlanguage.com.hk/chinese-courses. Ask to speak to Stuart (the boss) if you can, he's a really nice guy!
