All three carry the meaning "revive". I find 蘇醒 and 甦醒 in CantoDict*, but no 穌醒.

甦醒 is the standard version, the more popular one. 穌醒 is a correct variant, but it is not commonly used and does not deserve a separate entry in CantoDict. But we can add a note on the 甦醒 page indicating that 穌醒 could be a variant (as most dictionaries indicate that 穌 means "revive" ).
蘇醒 is a wrong entry because 蘇 does not carry the “revive” meaning. It should be deleted. This mistake arises from the fact that 苏 is the simplified form for both 甦 and 蘇.

The first has the reading "sou1 seng2" and the second "sou1 sing2", for some reason.

甦醒 can be read as sou1 sing2 in literary context and sou1 seng2 in colloquial usage. Though 醒 compounds are mostly read as sing2 in literary situation (醒悟, 清醒) and as seng2 in colloquial situation (瞓醒, 叫醒, 提醒), there are still quite a few exceptions where colloquial terms use literary reading (醒目, 醒神). So, the short-vowel literary and long-vowel colloquial rule is not a hard-and-fast one.
Anyway, we should add another note on the 甦醒 page indicating that sou1 sing2/seng2 are literary/colloquial readings.
