The Unihan database suggests the character 捦, but I can't seem to find much support for it (based on quick web searches) - most of the websites just copy-paste the Unihan definition.
廣州話正音字典 lists the above character as /kam1/ (but with Mandarin pinyin qin2, which I think relates to /kam4/) and defines it as "Same as 擒", which is /kam4/. :confused:
In any case, 擒 has one definition as "(dialectal) climb", or to quote more precisely:
(方)抓攀:~上去(爬上去)|~樹(爬樹)|~高(攀高)。有作 「⻊+禽」
Haven't figured out the Cangjie code for ⻊+禽 yet. :P
So three options thus far:
捦
擒
⻊+禽

Based on Zdic, it seems that 捦 is an archaic form of 擒, so let's not pick that one.
The cangjie for 禽 is OYUB, so for ⻊+禽 it would be RMOYB (although on Windows 7, at least, it doesn't seem to be a valid character.)
While I like it (⻊+禽) semantically, I suggest adding a definition of 'climb' to the entry for 擒, along with 擒高擒低 as an illustrative compound, based on 廣州話正音字典.
