I've been frustrated trying to learn the differences between 桿 and 杆 for some time, so I'd love some clarity here, too.

CantoDict has already correctly given a different meaning for 桿 and 杆. Such distinction is supported by at least ten HK and Taiwan dictionaries. Mainland dictionaries might mix them up because 桿 is simplified as 杆.

Maybe gon2 should be added as a reading?

廣州話正音字典 gives only one reading ‘gon1’. CUHK supports gon1 as standard and gon2 as variant readings. As regards the modern Canto dictionaries, about half support gon1 as standard reading; the other half opt for gon2.
Looking at the word examples on the character page, I guess all of them could be read as ‘gon1’ except 禾桿草 (hay) where 桿 should be 稈 (gon2).
